To make the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Premix (produces 850ml, to serve 10)

400ml premium vodka
100ml dry gin

200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Preparing the Cocktail Base: Pour all the liquids into a sizeable container, allow it to infuse for one hour, then strain preferably using cheesecloth, making it completely strained.

When ready to serve: Pour 85ml of the batch mix into your mixing glass packed with ice, and agitate carefully for about 60 seconds until cold. Strain into an cold coupe glass or equivalent, decorate with a few cranberries and finish using a brief mist of mandarin oil above the glass.
